About our Bakery
Fresh Baked By Tracy is a specialty bakery located in Haubstadt, Indiana and run by Tracy Wilzbacher – a Haubstadt native with years of professional catering and baking experience – who recently returned to the area to open and run a bakery in her home town. We are open to the public 6 days a week (closed on Monday’s) and offer a wide variety of delicious baked goods including: cupcakes, cookies, breads, brownies, wedding cakes, birthday cakes, and specialty desserts. One of our specialties is wedding cakes and wedding desserts – check with us to see what creative cakes we can design for your important event.
For breakfast and lunch, Fresh Baked is serving hot, tasty soups, crisp salads, & mouth-watering sandwiches for the public.
In addition, Fresh Baked by Tracy is available for catering. Contact Us about catering your next luncheon at work, or bridal and baby showers. We offer sandwich platters, bagged lunches, mini sandwich platters, pasta salad, and combination salad bowls. We also rent Fresh Baked to host an open house shower –a fun and cute setting for that special guest of honor!
A Little About Tracy
I was born and raised in Haubstadt, Indiana, a small town of about 1,500 just north of Evansville. As I child I loved to bake and would even cook dinner for my family, I simply loved being in the kitchen. I knew I had a passion for baking, but never knew if I wanted to make it my profession.
After high school I attended Sullivan University in Louisville, Kentucky and graduated with a degree in Baking & Pastry Arts. As a young graduate I wanted to see where I could go. I moved to Boston and worked as a Pastry Chef for a small bakery in Newton. I got experience and was also exposed to managing the bakery when the owners were away. I knew this was what I wanted. After 2 years I missed the small town, my friends and family, and decided to move back home. I contemplated on working for someone else for a while or taking the plunge and fulfilling my lifelong dream. On June 20, 2011, Fresh Baked by Tracy opened its doors and I am living my dream of owning my own business!

Laurel Catena, Pastry Chef
Laurel Catena is the full time Pastry Chef at Fresh Baked. I met Laurel while working in Newton, MA. She is originally from Oregon and attended Cambridge School of Culinary Arts, in Cambridge, MA. When I headed back to Indiana, she headed to California a few months later where her husband, Robert, took a new job. We kept in touch when we both went our separate ways. At the end of 2010 Robert took a job at the University of Evansville and they would be moving and purchasing their first home here in Evansville, Indiana, in just a few short months -what are the chances? Laurel and Robert have been settling into the Evansville area since the beginning of 2011 while raising their 1 ½ year old daughter.
